I want to say that initially, when we open, we clearly saw: yes, we want to open a second coffee shop in Moscow, but now we have mov a little away from this idea – we want to develop here, with production, with a training center. But we are not abandoning the first dream either.
What, in your opinion, is the difference between
Other coffee shops in Arkhangelsk? If there is one, of course… Alexander: We initially start to put two filter coffees even on a small flow, and now we make three, so that people get us to it. Today we brew a lot of black coffee. The guys I know from other coffee shops brew one or two thermoses a day, and a liter in volume.
We brew five or six two-liter ones on weekdays
More on weekends But in general, from other coffee shops we just brew the coffee we like, prepare the food we like, and create the interior we like. There are no rules. Our position is “person to person wow.” We think like this: the guest, the barista, the linkedin data cleaner, the manager, and the director everyone is absolutely equal.
That’s why we have an open bar counter
You can see what people are doing. We are for cleanliness, openness, and transparency. If we did something badly, we honestly say that we did it if you select the top 100 most visit sites badly, and admit our mistake. You mention equality in the coffee shop team. Tell us how you came to this and how you manag to organize it?
I think it was partly forc, because at some point
Due to a lack of people in the bar, we decid to train everyone and put them on the bar. Now everyone who is free stands at the bar. Sometimes Sasha himself stands and welds funnels. For example, on January 2, we organiz a special day “pajama shift.” Then everyone usa data greet guests in pajamas just like you greet guests at home on the second day after the New Year.
